We bake pizza for a living, so let us start with the thing that actually goes wrong at home. It is almost never the top of the pizza. It is the bottom.

A base goes soggy because of steam, not because of heat. Dough gives off water as it bakes, and on a solid metal tray that steam is trapped between the dough and the pan with nowhere to go — so the underside sits in its own moisture and effectively steams itself while the top browns nicely. You can turn the oven up as far as you like; a trapped base will still be pale and floppy.

Understand what the holes are for and everything else on this page sorts itself out. A pizza base gives off steam as it bakes. On a solid pan that steam has nowhere to go: it collects between the dough and the metal, and the base effectively steams itself. That is the soggy-bottom problem, and it is not a heat problem — it is a moisture problem. Holes let the steam out and let dry oven air in, so the underside dries and crisps at the same time the top is cooking.

The molded feet matter more than they sound. They lift the perforated base off the oven rack so air actually circulates underneath rather than the pan sitting flat on a bar. Holes with no gap under them do considerably less.

0.8 mm is a properly stated gauge, which almost nothing else here gives you. It is thick enough not to buckle at 450°F and thin enough to respond quickly.

Wide handles on a pizza pan are unusual and genuinely useful — a 14-inch disc of hot metal with a pizza on it is awkward to get out of an oven with mitts, and the handles add nearly two inches of grip.

Detroit style is a different pizza and it needs a different pan. The dough proves in the pan, cheese is pushed right to the edges, and the whole thing bakes deep. What you are after is frico — the caramelised, lacy crust of cheese that forms where it meets hot metal at the wall of the pan. You cannot make that on a flat round tray, because there is no wall for the cheese to fuse against.

Two and a half inches of straight-sided depth is the specification. Straight sides, not sloped: the cheese needs a vertical face to climb and crisp against, and a sloped-edge pan gives you a soft edge instead of a crunchy one.

PSTK is Lloyd Pans’ pre-seasoned coating, and it is genuinely different from a domestic nonstick. A solid pan is the right choice more often than pizza obsessives admit. Frozen pizza arrives with its base already baked and dried; there is no wet dough to steam, so there is nothing for holes to fix. Reheating slices is the same. Where a perforated pan has holes in a sheet of metal, a screen is a woven aluminium mesh with far more air than metal — the dough sits on thin wire and oven heat reaches nearly the whole underside directly.
